What am I going to cook for dinner? It can be difficult to get away from the same for dinner. We want our weeknight dinners to be delicious and easy, but it gets so difficult that we regularly cook the same meals each week. There is nothing wrong with that, but I wanted to send a bit of inspo your way. These are easy and quick to cook, so you will have your feet up and Netflix on before you know it.
Huevos Rancheros
Huevos Rancheros, or Spanish eggs, are a great one-pan dinner. Use the veggies from the recipe, but why not put in some other bits and pieces from the vegetable drawer?
Total time: 22 minutes.
Serves: 2.
Fish Tacos
Here’s to Taco Tuesday, or Wednesday, or Thursday…for me any day. These fish tacos are delicious and quick to prepare. You could combine them with any salads you already have in the fridge. Keep it tame with Mayo, or spice it up with some chilli sauce.
Total time: 25 minutes.
Serves: 3 or 2 if you’re hungry.

Beef & Broccolini with oyster sauce
Stir fry’s are a great weeknight dinner. It takes most of the time to prep, and then the cook is really quick. Before you start to cook, get all your ingredients, even the sauces ready to go so that when you fire up the wok (or frypan), you have everything at hand.

Thai Beef Salad
Thai beef salad is delicious and satisfying. A beautiful salad made of fresh produce and zesty dressing makes it a perfect meal as the weather is warming up.
Total time: 25 minutes.
Serves: 2.

Chicken Shawarma
I would make this one on Friday. What a way to start the weekend with this delicious meal. Served with flatbread, tabouleh, hummus and garlic dip…yum.
Total time: 20 minutes.
Serves: 4.
